I decided to cultivate it on the hills of Mugello, in Tuscany, in a context of respect for the territory and contemplation of nature.”

Our VentiVentuno Quality Sparkling Wine is made with 100% Pinot Noir grapes. This red grape variety, originally from Burgundy, is considered one of the most untamable grape varieties in the world, but which, with due skill, knows how to create wines of undisputed elegance. In Italy, the Mediterranean climate makes it difficult to manage and we have therefore often, as in the example of Pinot Noir in Tuscany, tried to compensate for the unfavorable latitude, with the altitude, exploiting areas with good temperature ranges and ventilated microclimates.

Vinification
Quality Sparkling Wine. Refermentation directly in the bottle, through the introduction of selected sugars and yeasts. In this way, the wine acquires the traditional pressure, deriving from the accumulation of carbon dioxide, and the characteristic bubbles. After a period of rest, which can vary from 24/36 months and even exceed 120 months, the remuage phase begins. The continuous rotation of the bottle causes the residues of the fermentation yeasts to settle on the cap. In fact, one of the last phases is disgorgement, which consists of freezing the neck of the bottle to facilitate the removal of the cap and allow the deposit to escape under pressure. The very last steps are the dosage, in this case Extra Brut, with the addition of a mixture of sugar and wine to restore the part of wine expelled, and the definitive capping. This vinification process gives life to the Classic Method.

It goes well with fresh oysters, fish carpaccio, vegetable crudités and appetizers based on lean cold cuts.
